Quarantine Cooking With Kim Carr – Carrot Cake Cheesecake Bars

This is the perfect time of the year to bring this dessert out for the whole family. With Easter on Sunday, if you want a sweet treat that will put a smile on everyone’s face, this is it. Plus, this is one way to get the kiddos to eat their carrots.

 

Carrot Cake Cheesecake Bars
Ingredients
For the Carrot Cake Part: 
1/2 cup of butter (melted) 
1 cup of brown sugar (light)
1 egg
1 tbsp of vanilla extract
1 cup of all purpose flour
1 tsp cinnamon
1/4 tsp of baking powder
1 cup of carrots (shredded)
Cheesecake Part: 
1/2 of a package of cream cheese 4 oz. (make sure this is a room temperature)
1/4 cup of granulated sugar
1 egg yolk
3/4 tsp vanilla extract
Directions
Preheat the oven to 350 degrees. Use an 8×8 baking pan that is non stick or use a glass one and spray with some non stick spray. Set this then aside. 
If you have not already done so, melt the butter in a microwave safe dish, about 30 seconds or so. Then in a medium sized bowl add the melted butter and brown sugar together. Mix together well.
Next add in the egg and vanilla, and mix well.

Now add in the flour, cinnamon, baking powder and mix until everything is completely combined.
Add and fold in the shredded carrots. 

Now in another medium size bowl, combine the cream cheese, sugar, egg yolk and vanilla. Mix this all together until it is smooth and creamy. 

Here comes the fun part. Pour about half of the carrot cake better into the pan. Make sure to spread it out with a spoon or spatula. 
Next take about half of the cream cheese batter, and drop spoonfuls over the carrot cake batter. Then drop the remaining carrot cake batter around the cheesecake batter, and add in the rest of the cheesecake batter at this point. Here is the fun part. Take a knife and swirl around the two until they are all swirled together. 
Bake in the oven for about 40 minutes or until the edges are golden brown.
There might be a little jiggle to the center but that is normal. 
Make sure to let this cool completely before cutting into squares and serving. You should store this in the refrigerator when done.
