Quarantine Cooking with Kim Carr – Easy Peasy Breakfast Casserole

Since I have found myself at home now more. It’s been a challenge to come up with new ideas for breakfast for my family. You can only eat so many pancakes, waffles and bowls of cereal before you get bored. If you want to have a nice hearty breakfast, this would be it. The best part of this is that you can put it together the night before, and let it sit in the fridge. Then take it out the next morning and bake it. I actually prefer making this the night before, because it gets crispier. However, let’s face it sometimes we just forget to think that far ahead.
Also if you are looking for a great idea for Easter Breakfast, this would also be an ideal choice. Plus, this is really something the whole family will love. My toddler couldn’t get enough of it this weekend.
Easy Peasy Breakfast Casserole
Ingredients 
1 lb of Ground Sausage 
6 Eggs
1/2 bag of Frozen Shredded Hash-browns 
2 Cups Milk 
2 Cups Shredded Cheddar Cheese 
Salt and Pepper to taste
Directions
Preheat the oven to 350 degrees. Grease a 9×13 baking dish. Next cook the sausage in a skillet on the stove top. Crumble up the sausage as you are browning it completely. Once it is fully cooked remove from heat. 
Now in a large bowl, mix the milk and eggs together. Mix well either by a whisk or hand mixer. Once that is mixed together you can then salt and pepper the mixture to taste. 

In the 9×13 baking dish add the 1/2 bag of frozen hash-browns. Now I personally like the shredded ones. If you so chose you could use the cubed potatoes or the ones that have the onion and peppers in them. Next add the cooked sausage, and about 1 cup of cheese.

Mix all of this together in the baking dish. Once it is nicely mixed together, add in the egg and milk mixture. 

Now you will want to cover it with foil. Cook in the oven for about 35-40 minutes. Once that is done, take it out of the oven and remove the foil. Sprinkle the rest of the cheese on top and put back into the oven for an extra 15 – 20 minutes. Depending on your oven it may be closer to the 20 – 25 minutes. 
Once the time is up, you can really get the cheese to bubble up by turning the oven onto low broil. This will really help get the cheese all melted. Be careful not to let it in there too long maybe 3 minutes max, other wise it will burn. 
Take out of the oven, let it sit for a few minutes before serving. 

Of course you can add in more than just sausage to this like onions, tomato, bacon. The sky is the limit. Don’t forget if you want to save time in the morning just mix this all together the night before. Stick it in the fridge and then bake it in the morning. I would suggest letting it get to room temperature before putting in the oven. Enjoy
